Xanthan gum is a natural polysaccharide produced by fermenting carbohydrates with the bacterium Xanthomonas campestris. Its strengths: it thickens at very low dosage, is stable to acid, salt, heat and freezing, and gives a smooth, non-dripping texture, which is why it is used in almost every sauce, dressing and thick beverage.
We source from two major producers, Fufeng and Deosen (Ziboxan brand), so supply is secure all year and customers can choose the grade that suits them best. 80 mesh is the usual choice for food and technical uses; 200 mesh is finer, dissolves faster and is chosen for beverages, instant products and personal care.

What is the difference between xanthan gum and guar gum?
Xanthan gum is more stable to acid, salt and high temperature and gives a smoother texture; guar gum is more economical with high viscosity. The two are often combined because they boost each other's viscosity. See also our Guar Gum page.
Is xanthan gum suitable for gluten-free products?
Yes. Xanthan gum is widely used in gluten-free formulations to replace the elasticity and binding normally provided by gluten.
